Well, today I popped downstairs to see how the fermentation was going. Everything seems to be going well. Not much of a krausen has formed on either carboy, but it's a nice start. The temp is low in a Wisconsin basement this time of year, so I am expecting the fermentation to take a full ten days. After that I'm debating if I'm going to dry hop. Give it a bit more of an aroma that way!

Today was a good day for brewing beer. I started out by heading down to meet my grain guy to pick up assorted grains, hops and yeast. The haul was 55lbs of two row, 2lbs of chocolate, 2lbs of flaked barley, 1lb of crystal 15, 1lb of crystal 75 and a pound of rosted barley. Also had yeast and 4 oz each of Willamette, Nugget, Fuggles and Cascade hops.
Using some of that I set out to make an Irish Stout. I do the BIAB style so the grain bill was pretty heavy. I have decided that I really want to build a pulley system before my next brew day to make life easier for me. The end result was two fairly full carboys, but it was more hassle than I would have liked. Well, today I bottled a batch of cider. It's a common recipe created by a guy name Ed. It's a real simple recipe, that I assembled (not really brewing) right after frying the turkey. All it takes is five gallons of apple cider/juice, no preservatives as that will kill our yeasty friends, two pounds of brown sugar and a packet of montrachet wine yeast. Mix it up in a carboy, put on an air-stopper and away it goes. Easy and very delicious. After bottling let it sit a while. I usually only can wait a week before I start to pillage it! Prost!
Today was a busy day. My brewery has grown in the last two years to overtake most of the basement.. So we went out and got me some new shelving! It fits almost all of my brewing gear and some of my meat grinding gear. Very nice to have it all off of the floor! Hopefully I'll be brewing soon! Best wishes! Starting this blog to track my adventures in brewing. I will update it as often as I brew. Currently I have lots of bottles building up in the basement, 7 cases now... I just started a batch of Apfelwein today. It will be ready to bottle around new year and ready to drink a couple weeks thereafter. Cannot wait to drink it!
